These 11 cm full-handle knives are inspired by the early Laguiole models created in the mid-1800s. Each handle is expertly hand-shaped by skilled artisans. The lack of metal bolsters contributes to a lighter and more ergonomic design. Each knife features a forged bee, a full-length hand-chiseled spring, and, in most models, the iconic shepherd's cross. Additionally, these knives are designed with a solid hardened blade stop to prevent the blade's edge from coming into contact with the inner area of the spring. The Guilloché series features additional chiseling of the spring, liners (top & bottom), and the entire blade top edge.
